SCADPro: Future of Food Logistics
The last mile of food logistics can be a long and winding road. With recent global events, the importance of how food gets from the market to the consumer is coming into sharper focus. Exploring the logistics of the food supply chain revealed many cracks in the system. But, when there are many cracks, there comes an opportunity for transformation and innovation.
Nine students from six different disciplines tackled this seemingly daunting task over ten weeks. If there's anything important we learned as a group given a task the size of Mount Kilimanjaro, it's that each layer we unraveled became another Kilimanjaro, and another, and another.
Our research led us into topics such as food waste, transparency, food insecurity, sustainability, accessibility, and more. There were so many different areas for our project to affect that we refocused on where we thought the most change could occur. We chose to further explore a topic that we felt most passionately about. That is the issue of Americans' unequal access to affordable, fresh, and healthy foods in rural areas.
Our goal is to connect local communities through fresh food. County Fresh Harvest is our system we created to serve all the different people that struggle with food insecurity. We do not want them to stay a statistic.
